how do i change the profile letter colours?

The colour of the profile letters is white so you can't see them how do i change it?

Admin Panel -> Users & Groups -> Users -> Profiles -> Edit any of them -> Change the color next to "name"

No... you have choose any of them and click the

button next to any one of them you choose.
