GSX cafe project

Hi everyone new to the site. I am embarking on the cafinisation!! of a 1980 GSX 750 E. I was really looking for a CB honda like lots of other ppl but here in Australia they are just too damn expensive!! Picked up a pretty tidy GSX with a good engine for cheap and now I get to start throwing money at it. Any hints/suggestions on sourcing parts like tanks/seats etc would be appreciated. I want to convert the bike to wire wheels and would think that GS wheels would
