Minecraft PvP

So, PvP comes out next week! (and there was much rejoicing)

Seikle/Teil, I, and a couple of other people have been debating how to do PvP on our server.
Personally, I think we should leave the current server on no-PvP and start another server for wars and the like.
Perhaps we could even have organized battles, and forbid attacking the other player at any other time (so we can ensure people are online to defend themselves)
